FLAKEY FISH WITH BALSAMIC GLAZE

Non stick cooking spray (optional)

2 tablespoons extra-virgin olive oil, plus extra for greasing the baking sheet (optional)

2 tablespoons balsamic vinegar

1 tablespoon Dijon mustard

2 cloves garlic, finely minced

1 tablespoon light or dark brown sugar

Kosher or coarse salt and freshly ground pepper

4 cod, halibut, or sea bass filets (ea. about 6-oz and 3/4 inch thick)
