Red's Famous Mrs. Simpson's Chip-Chocolate-Cookies

Posted by Red Kingman on

Here is the recipe for my chocolate chip cookies, made from a recipe that I was given by Mrs. Simpson way back in 1975.  She was the Mother of one of my good friends from High School, Leonard Simpson.  Almost everytime I would go over to Leonards house, which was about three or four times a month, his Mother would always ask me if I wanted some chip-chocolate cookies..that she would make from scratch while dressed up like June Cleaver!

Here is a picture of Mrs. Simpson from last year just before she passed away.

1c flour
6-tblsp white sugar
6-tblsp brown sugar
1/2 tea baking soda
1/2 tea salt
1-egg
1-stick of softened butter
1 stick of cream cheese
1/2 tea vanilla

Combine the flour, salt and baking soda in seperate bowl, set aside.  Combine sugars, butter, cream cheese, egg, and vanilla beating until stiff.  Then add vanilla.  Mix the flour mixture with the wet mix and add chocolate chips after folding the flour mixture in.  Put into the refrigerator for 30-minutes, and bake cookies at 375.
